Ingredients:

Salad
 ½ small red cabbage, shredded
 4 medium carrots, shredded
 1 head of swiss chard, julienned
 1 red pepper, thinly sliced
 1 yellow pepper, thinly sliced
 ½ cup Cilantro, minced
 ½ cup peanuts, roughly chopped for garnish
 green onion for serving, thinly sliced for garnish
Dressing
 ½ cup peanut butter
 3 tbsp Coconut Aminos
 2 cloves garlic
 2 tbsp fresh lime juice
 1 tbsp roasted sesame oil
 1 tbsp honey
 1 tbsp grated ginger, juice only (squeeze out using your fingers)

Directions:

Place all of the dressing ingredients in a blender and blend until smooth.

In a large bowl, combine all of the salad ingredients except the green onion and peanuts.
Combine dressing with the salad and mix well.

Sprinkle with green onion and peanuts and serve.
