Ingredients:

 bacon
 chicken / shrimp / scallop
Served with
 arugula greens
 purple onion
 diced avocado
 'Better than Chimichurri' (see other recipe)

Directions:

Cut bacon in half. Wrap a slice of bacon around chunk of chicken, shrimp or scallop. Secure with toothpick or place on skewer, leaving space between each piece.

Bake or grill 20 minutes or until bacon is cooked through.

Serve over bed of arugula greens, purple onion and diced avocado, tossed with 'Better than Chimichurri'
