Apple Pumpkin Pam-cakes

Preheat oven to 425°F..

Place 4 tablespoons butter into 9" x 13" cake pan. Place in oven for a few minutes until butter melts. Remove pan from oven. Add one tablespoon honey, and 1 teaspoon cinnamon and mix.

Peel (optional), core and slice thin 3 green apples. Place apple slices into hot pan. Drizzle one tablespoon honey on top and lightly mix apples to coat with honey, cinnamon, and butter mixture.

Return pan to oven for 15 minutes. In meantime prepare batter as follows

In a large mixing bowl, combine pumpkin, eggs, and butter (or coconut oil).  Blend well. 


3/4 c. cooked pumpkin

6 large whole eggs (300 grams)

4 T melted butter, or ¼ c coconut oil


3 T honey

1/4 t. sea salt

1 t. vanilla extract

¾ t. cinnamon

1/2 t. ground nutmeg

1/4 t. ground ginger

1/4 t. ground cloves

1/8 t. ground allspice

3 T. coconut flour, packed (30 grams)




Mix at medium speed until all ingredients are fully incorporated.
pour pancake batter on top of apples.
Return pan to oven. Bake from 20-30 minutes. Pancake will lose its shiny look when done and will feel firm to the touch.
